I'm sure this has already been discussed elsewhere, but if not it should be. No one wants this to just "fizzle out", so I think it's necessary to set an "end date" for the occupation. It's already been about 50 days I think, so perhaps everyone could go about another 50 and make it a solid 100 days of protest and end it on or around the New Year. I think that would be a meaningful benchmark to set. Possibly though the end date should be set even sooner, we don't want anyone getting hypothermia when the winter comes.
I think the goals of OWS, things like bringing back Glass-Steagall, campaign finance reform, ending corporate personhood, and perhaps bringing about the Consumer Financial Protection Bureau that Elizabeth Warren was supposed to head, etc., should and can continue to be worked on without physical occupation. I think the TV ads were a step in the right direction and we should have more of that.
Of course some people would want to keep going, but I think there has to be a defining close to the overall protest so that it doesn't just fade out, that would be the worse thing to me. There could also be some additional protests set to occur again on special days, every week or every month or throughout the year in the same vein as OWS, so even after it "ends" it wouldn't really be over.

Check my other posts, I'm dead serious. I don't want the movement to end, but I also don't want people to end up just staring at each other wondering, "Can I go home now?"

Occupying land is a powerful statement. Occupying Zucotti park has given the powers that be (TPTB) a wake-up call. It's the proverbial "shot across the bow". But to expect supporters to freeze in a tent in the depths of winter? OWS will fizzle out very soon if they don't act. NYCGA has to Declare the occupation over (i like 11/11/11) and proceed with the 99% Declaration. I don't see any other credible course of action. I like your idea to have special occasion occupations.

That's true, but groups can collectively come together like we are here now and try to figure out what would be the best resolution to these protests. Everyone wouldn't agree of course, but if a reasonable, meaningful timeline were set with recommendations for future action, then others would probably follow suit.
