Oh no! They're coming! What to do?
Their major weakness is a lack of visibility which severely limits their mobility and decreases their reflex speed.
My group of protesters lays tiny near invisible wires all around our site. When they come, we throw a zillion marbles on the ground and watch them slip and fall; then we briskly pull on the wires to ensnare them. Quickly, we pin them down and tie them up; a thousand Lilliputians against a hundred Gullivers. We finalize our non-violent escape by putting a note on our victims like Spiderman used to put on his villains, then we calmly walk away towards another site to Occupy.
What non-violent tactic(s) would you use?

This is not non violent. It is an agressive act that could result in injury.
Hmm... I'm not too sure how a police officer dressed in full riot gear could hurt himself by simply falling? What would be your method?
Any fall can lead to broken bones, bruising or other damage to soft tissues like sprains. The damage is related to the persons own mass, how they fall, and what they fall onto--none of which would be controllable.
Once you take action that can cause harm, you become liable for any harm incurred and that can come through civil or criminal litigation. It also puts you on the moral low road.
I advocate turning away from police, chanting the applicable portion of the first amendment or remaining completely silent.
Occupy's goal is to create tension with the police. They use direct action to encourage confrontations.
